Tequila – Lime Chicken

1) In a bowl combine:

– 2 Tablespoons Olive Oil

– 3 Tablespoons White Tequila

– 3 Tablespoons Orange Juice

– Zest of 1 Lime

– 2 Onions, sliced

– 1 Tablespoon Lime juice

– 3 Garlic cloves, crushed

– 2 Tablespoons Chili Flakes

– 2 teaspoons Cumin

– 1 teaspoon Oregano

– Salt and Black Pepper, to taste

2) Mix well and pour over 2 pounds of chicken thighs! Allow chicken to marinate no longer than 8 hours.

3) Pour the chicken and marinade into a baking dish (no foil pans, as the metal will react with the acidity in the tequila and lime juice)

4) Roast the chicken in a 375 degree oven, covered, for 1 1/2 hours, then uncover and raise the temperature to 400 and roast until the sauce has reduced and thickened, and the chicken’s surface has browned. **Baste the chicken with the pan juices periodically while it is roasting.

*Note: The cooking times above pertain to chicken thighs only. Chicken breast requires much less time, whole chicken requires more. Recipe can be used for any part just adjust your time accordingly!
