1) For the fish:
👉Clean and dry 4 flounder fillets, place on baking pan lined with parchment paper
👉Season with Cajun fish seasoning (or fish seasoning of choice)
👉Roast in a preheated 450 degree oven about 8 minutes – remove and set aside
2) For the veggies:
👉In a sprayed pan, sautee red onion, red pepper, mushrooms and garlic – quantities vary to your liking
For the sauce:
👉Combine 1/4 cup light mayonnaise (I always use Veganaise), a handful of chopped dill pickles, a teaspoon of lemon juice and a teaspoon of chopped dill – Combine and set aside
3) Putting the Fajita together:
👉Grill a whole wheat tortilla on both sides until heated through, place on plate
👉Place fish on tortilla, then the veggies, a dollop of the sauce and (optional) a drizzle of sriracha
👉Serve with a lemon wedge to squeeze after fajita is rolled and ready to eat
