π―For the cake:
π2 1/2 cups flour
π1 1/2 teaspoons baking powder
π1 1/4 teaspoons cinnamon
π1/2 teaspoon salt
πdash of ground cloves (optional)
WHISK OR SIFT, then in a separate bowl……
π1 cup honey (1 1/2 if you like dessert very sweet)
π3/4 cup vegetable oil
π1/2 cup strong brewed coffee
π1/2 cup sugar
π3 eggs
WHISK UNTIL COMBINED then……COMBINE WITH THE FLOUR MIXTURE AND WHISK TILL SMOOTH
π―Pour batter into a greased 10″ springform pan and bake in a PREHEATED 325 degree oven for 1 hour and 20 minutes.
π―After cake has baked, as it is cooling prepare the fig topping….
πMelt 1 tablespoon vegan butter in a saucepan
πSlice 1 pint of black mission figs in half and place cut side down in the butter…….allow figs to brown on medium flame about 5 minutes
πIn a small bowl combine: 1 tablespoon honey and 1/4 cup whiskey — deglaze the pan with this
πAllow the figs to absorb the liquor about 5-7 minutes more
πSpoon warm Caramelized liquored up figs over your cake and drizzle any remaining sauce over them.
