๐ณBeef-Rice Yebra (Stuffed Grape Leaves)๐ณ
Ingredients:
๐1 1/2 cups cooked medium grain rice
๐3/4lb lean ground beef
๐3 tablespoons tomato paste
๐1 teaspoon all spice
๐Salt + Pepper to taste
๐Grape Leaves, drained, rinsed and stems trimmed
๐1/2 cup pomegranate molasses
๐2 cups water
๐dash of sugar
๐ณCombine the first 5 ingredients, mix well (by hand is best)
๐ณFill each grape leaf with about 1 tablespoon of the mixture and roll tightly, arrange the rolled leaves in a pot/pan of choice – you mat stack multiple layers
๐ณAdd the remaining ingredients to create a broth and place an inverted plate over the grape leaves (this keeps the grape leaves from unrolling during the cooking process
๐ณBring to a boil, then reduce to simmer (covered) about 1 1/2 hours – periodically press down on the inverted plate
Yebra is ready when most of the broth has been absorbed and the leaves have expanded a bit
