Ingredients:
– 3/4 cup steaming (not boiling) hot water
– 1 packet yeast
– 1/2 teaspoon sugar
– 1 and 3/4 cup flour
– 1 teaspoon salt
– 2 teaspoons olive oil
– 3 red onions, sliced thinly
– 1 tablespoon olive oil
– salt and pepper, to taste
– pinch of thyme
– olive oil, for brushing the dough
– (optional) goat cheese for topping the focaccia
Instructions:
1. Place 3/4 cup steaming hot water (not boiling) in a bowl, and sprinkle 1 packet yeast and 1/2 teaspoon sugar over the surface – Allow it to foam at least 5 minutes
2. In a separate bowl place 1 3/4 cup flour and 1 teaspoon salt and mix
3. When yeast has bubbled, add 2 teaspoons olive oil to the water and mix then add the mixture immediately to the bowl with the flour
Mix well until a dough forms…..knead until all flour is absorbed and dough isn’t sticky or dry but is inbetween (add more flour or water if you feel the need)
Divide dough into 8 balls and place on a floured tray, cover with a towel and let rise 1 hour
4. Slice 3 red onions thinly and Sautée in a bit of olive oil, salt and pepper until translucent…….then add a pinch of thyme and deglaze the pan with 3 tablespoons olive oil – remove and set aside
5. Flatten dough balls into rounds with your fingers and brush top surface with a bit of olive oil
6. Add desired amount of onions to each and top with chunks of goat cheese
7. Bake in a preheated 450 degree oven about 15 minutes until Foccacia has puffed, the bottom is crisp and the center is soft
