Deep Dish Chocolate Chip Cookie Dough Pie (recipe from Chocolate Covered Katie)

๐ŸชDeep Dish Chocolate Chip Cookie Dough Pie ๐Ÿช

๐Ÿช2 cups dates, pitted and soaked in boiling water 5-10 minutes 

๐Ÿช2 can chickpeas (or white beans) rinsed and drained

๐Ÿช1 cup quick-cooking oats

๐Ÿช1/4 cup unsweetened apple sauce

๐Ÿช3 tablespoons coconut oil

๐Ÿช2 teaspoons vanilla extract

๐Ÿช1/2 teaspoon baking soda

๐Ÿช2 teaspoons baking powder

๐Ÿช1/2 teaspoon salt

๐Ÿช2/3 cup coconut milk 

๐Ÿช4 packets stevia

๐Ÿ‘‰Place the chickpeas in a food processor and process until smooth

๐Ÿ‘‰Drain the soaked dates and add them to the food processor, continue processing until the mixture is blended and smooth (of some date chunks remain this is okay)

๐Ÿ‘‰Add the remaining ingredients to the food processor and process at least 1 full minute – making sure to combine all the ingredients well…….the oats may not blend completely but this is fine, they will absorb the milk in the recipe while baking and soften

๐Ÿ‘‰Pour batter into a sprayed springform pan  

๐Ÿ‘‰Place in a preheated 350 degree oven for about 25-30 minutes

๐Ÿ‘‰Allow pie to cool completely before removing from mold. The pie isn’t set until it is cooled and may crack if handled when still warm!

๐Ÿ‘‰Enjoy with whipped cre, ice cream, chocolate sauce, hot, cold, or as is ๐Ÿ˜Š

*Note: If you don’t like coconut oil/milk you may replace with any other healthful, clean option
