French Onion Soup

๐Ÿ‘จFrench Onion Soup #oui
Ingredients:

๐Ÿ‘‰2 tablespoons olive oil

๐Ÿ‘‰6 large Yellow onions, sliced

๐Ÿ‘‰dash of sugar

๐Ÿ‘‰3 cloves garlic, minced

๐Ÿ‘‰1 tablespoon fresh thyme OR 1 teaspoon dried

๐Ÿ‘‰1/2 cup dry white wine

๐Ÿ‘‰6 cups low sodium beef broth

๐Ÿ‘‰1 tablespoon Dijon mustard

๐Ÿ‘‰Salt + Pepper, to taste

๐Ÿ‘‰Slices of bread of choice

๐Ÿ‘‰1/4 cup shredded cheese of choice, per bowl (I used shredded Munster) 
๐Ÿ‘จPlace olive oil and onions in a pot over medium-low flame, add a dash of sugar and a dash of salt and mix – allow the onions to sautee about 30-40 minutes, mixing every now and then…..the onions should turn a deep brown caramel color 

๐Ÿ‘จAdd the garlic, thyme and Dijon mustard and mix well, about 1 minute

๐Ÿ‘จAdd the white wine to the pot and mix, scraping up the bits stuck to the bottom of the pot – allow this to simmer uncovered about 6 minutes (this allows the alcohol in the wine to evaporate)

๐Ÿ‘จAdd the broth and salt and pepper and bring to a boil, cover and reduce to simmer 15 minutes more.

๐Ÿ‘จLadle the soup into an oven-safe bowl and place a slice of bread on the top. Sprinkle the shredded cheese on top of the bread. Place this under the broiler, until the cheese and bread are roasted and are a golden brown color. 

Serve immediately! Enjoy!!
