ππGinger Apple Crispππ
Ingredients:
π6 medium apples (any kind)
π1 teaspoon cinnamon
π2 tablespoons raw coconut sugar (if using sweet apples, use 1 tablespoon)
π2 tablespoons gluten free oat flour (I make my own by putting gluten free oats in my magic bullet and blending)
π1/2 teaspoon powdered ginger
π1 tablespoon lemon juice
Topping:
π1 cup gluten free oats
π1 teaspoon vanilla extract
π1/2 teaspoon cinnamon
π1/4 cup raw coconut sugar
π2 tablespoons chilled coconut oil (must be chilled!!) cut into small cubes
**1/4 cup water, just before baking
1. Peel and core the apples, dice into small cubes and mix with the remaining ingredients…….pour into a large baking dish (at least 9×13) and set aside
2. Mix the topping ingredients to create a crumble……this can be done with a fork, or pulsing in a food processor OR my favorite way is by hand – a coarse or thin crumble is fine, whatever is your preference
3. Pour the crumble over the apples and give the dish a shake so some crumble falls into the apple mixture
4. Pour 1/4 cup water around the edges of the dish
5. Bake, uncovered, in a preheated 325 degree oven about 40 minutes……then raise the temperature to 350 and bake another 10 minutes.
Serve alongside whipped cream and ENJOY! ππ
