Ingredients:
– 2 large onions, diced
– 1lb. Lean Ground Beef
– Salt, Pepper, All Spice (to personal taste)
– 3 large Potatoes, peeled, diced and boiled
– 1 Egg mixed with 1 Tablespoon water
– Oil for frying
1. Sautée 2 large onions, diced, until Caramelized – remove to a bowl and set aside
2. Sautée 1lb. Lean ground beef – seasoned with salt, pepper and all spice – just until cooked through, add to the bowl with the onions
3. Boil 3 large potatoes (peeled and diced) in salted water until softened, drain and mash with salt and pepper – add to the bowl with the beef and onions and mix well (this will bind the borekas “stuffing”
4. Wet square matza with warm water until very wet, do this individually so each matza is really moistened – cover with a damp towel at least 10 minutes before handling – Slice the matza right down the center so each matza yields 2 long strips
5. Stuff a heaping spoonful of the potato/beef/onion mixture onto the tip of the matza strip and roll – set aside until all “borekas” are rolled
6. Dip each roll completely in egg wash and pan fry – seam side down first, then rotate until all sides are fried
7. May freeze and warm in the oven to serve crisped.
