Almond Milk – Chia Seed Mousse

Along with the rest of America, I’ve been on the Clean Eating Train for quite some time.

While Kale seems to be fading into the past, Chia Seeds still stand strong as a popular SuperFood!

For this mousse you need just a few ingredients and a bit of time, because these have to be prepared and then refrigerated a few hours before they’re ready.

Ingredients:

– 6 cups Unsweetened Almond Milk (unflavored)

– 1 cup Chia Seeds

– 3 teaspoons Vanilla extract

– 5 Tablespoons Maple Syrup

– 1/4 cup Cocoa Powder

– 2 cups Berry of choice (Strawberries, Blueberries, Blackberries, etc.)

For Garnish:

– 6 Tablespoons Flaked (Unsweetened) Coconut

– Loose Berries

FIRST………..

In a blender, combine the Almond Milk with Maple Syrup and Vanilla.

With the blender running, add the Chia Seeds in and continue blending 1 minute.

Set the blender aside and wait 10 minutes before continuing – mixing every few minutes inbetween.

The almond milk should have a pudding-like consistency when time is up.

THEN………..

Set aside 2 cups of the Almond Milk-Chia mixture.

Spoon the remaining 4 cups among 6 serving glasses, set aside.

Place the 2 cups reserved Almond-Chia mixture in the blender with the Strawberries and Cocoa Powder.

Spoon a few tablespoons of this over the Vanilla Almond-Chia you just spooned into serving glasses.

Top each serving with a tablespoon of flaked coconut and some berries.

Refrigerate at least 4 hours before serving.
