Brown Rice and Beef stuffed Grape Leaves (Yebra)


๐Ÿ‘‰1 1/2 cups cooked medium grain brown rice 

๐Ÿ‘‰3/4lb lean ground beef

๐Ÿ‘‰1 small onion, minced

๐Ÿ‘‰1 teaspoon all spice

๐Ÿ‘‰Salt + Pepper to taste

๐Ÿ‘‰Grape Leaves, drained, rinsed and stems trimmed

๐Ÿ‘‰1/2 cup lemon juice (fresh is best!)

๐Ÿ‘‰2 cups boiling water

๐Ÿ‘‰1/4 teaspoon turmeric

๐Ÿ‘‰1/2 teaspoon dried mint 


๐Ÿ‘ณCombine the first 5 ingredients, mix well (by hand is best)
๐Ÿ‘ณFill each grape leaf with about 1 tablespoon of the mixture and roll tightly (like you would a wrap – first the sides then tuck and roll forward), arrange the rolled leaves in a pot/pan of choice – you may stack multiple layers
๐Ÿ‘ณAdd the remaining ingredients to create a broth and place an inverted plate over the grape leaves (this keeps the grape leaves from unrolling during the cooking process)
๐Ÿ‘ณBring to a boil, then reduce to simmer (covered) about 2 – periodically press down on the inverted plate
   Grape Leaves are ready when most of the broth has been absorbed and the leaves have expanded a bit
