Maple – Whole Grain Blueberry Torte

🏼1 Stick Earth Balance (All Natural Butter Substitute)
🏼1 egg
🏼3/4 cup Maple Syrup

🏼1 teaspoon vanilla extract
🏼1 teaspoon citrus zest (ideally, lemon or orange)
🏼1/2 cup juice of choice of zest (lemon if lemon zest, orange if orange zest)
🏼2 and 1/4 cups whole grain flour
🏼2 teaspoons baking powder
🏼1 teaspoon salt
🏼1 package blueberries (about 2 cups)


  1. Cream the earth balance and sugar in a bowl – then add the egg, vanilla, zest and juice and MIX

2. In a separate bowl, combine the flour, baking powder and salt

3. Add the dry ingredients to the wet ingredients and MIX

4. Fold in the blueberries with a spatula, working carefully not to break them

5. Pour the batter (should be very thick) into a pie dish or 9″ springform pan that has been sprayed/greased and spread evenly
6. Sprinkle 1 tablespoon of sugar over the surface of the batter (to get that golden crust)

7. Bake in a PREHEATED 350 degree oven 40-50 minutes, until a toothpick inserted in the center comes out clean and you have a crispy crust.  ENJOY!!
