Confession: I absolutely love the recipe for #TheCabbageSoupDiet soup!
I know, crazy right? Why eat it if you’re not on the cabbage soup diet?! But if you know me, you know I love my veggies! Of course I tweak it to spice it up, but it’s sooo perfect for a cold winter supper!
It’s also a great snack for inbetween meals when you’re hungry but it’s too soon for your next meal! What?! Soup as a snack? YES! A good friend, who is also a registered dietitian, taught me that cabbage is a super low calorie vegetable so you can enjoy it and not be hungry between meals while also not compromising your daily intake. #DietScience #Brilliant
ππΌ5 scallions
ππΌ1 green pepper
ππΌWhole bunch celery
ππΌ1 bag carrots
ππΌ1 package mushrooms
ππΌ1 small head cabbage
ππΌ1 can v8 juice
ππΌ2 cans diced tomatoes (no salt added)
ππΌ1 bunch cilantro
ππΌ4 cloves garlic
ππΌturmeric, ginger, coriander, cumin, black pepper, salt
ππΌjuice of 2 lemons
ππΌEnough water to achieve desired consistency
Slice and dice the veggies as you like, throw it all in a pot and let it simmer 2 hours! Divide and freeze as you wish! ππ
