Puerto Rican Black Beans 

First make the SOFRITO!In a food processor blend:

– 4 Plum Tomatoes

– 1 large yellow onion

– 3 jalapeños (seeded)

– 1 red bell pepper

– 2 bunches cilantro 

– 10 cloves garlic 

– salt, to taste 
This makes a LOT but you want to portion this out and save it! It’s delicious!
Meanwhile…..place into a pan 

– 2 cans black beans, rinsed

– 1 cup pitted green olives (with red pimiento if you find!)

– 1 cup of SOFRITO

– 1 tablespoon Cumin

– 1 teaspoon paprika

– 1/2 teaspoon turmeric

– 1/2 teaspoon coriander

– pinch of oregano

– optional: ground annato seeds

– optional: Diced potato (I like the creamy texture the starch of a potato gives)

– 2 cups tomato sauce 

– salt and black pepper 
Bring it to a boil and reduce to simmer 30-40 minutes or until the potatoes are cooked through!
Serve over rice!
I like to enjoy mine with hot sauce, a splash of lime and a spoonful of Sofrito and sour cream right over the top!
