Lighten Up Sesame Chicken

This dish is such a pleaser! Your spouse will be pleased. Your kids will be pleased! Your guests…..heck, even your dog! Who doesn’t love sesame chicken?! 

Not gonna lie….I avoid making dishes like these like a plague. Forget the frying mess (oil EVERYWHERE) but how about all those calories?! The calorie struggle is real people! 

So I did some research (aka recipe browsing) and devised a plan to make a sesame chicken that’s a little lighter but still amazing. 

I simply doused cubed chicken breast in some flour and pan fried it lightly, then drained it on paper towels……

In a large bowl I mixed the following ingredients (except the sesame and greens) , mixed in the chicken, placed in a baking dish and baked (covered) on 350 for a half hour. 

You could also simmer on the stove for 30 min!

For that saucy goodness:

πŸ‘πŸ»1/2 teaspoon powdered ginger

πŸ‘πŸ»1 clove garlic, grated

πŸ‘πŸ»1 teaspoon chili paste (recommended: Sambal Oelek)

πŸ‘πŸ»1/3 cup water

πŸ‘πŸ»2 Cups Sugar free Apricot Jelly (to simulate duck sauce) OR Sweet n Sour Duck Sauce 

πŸ‘πŸ»1/4 cups cornstarch

πŸ‘πŸ»2 tablespoons rice wine vinegar OR white wine 

πŸ‘πŸ»2 tablespoons soy sauce

πŸ‘πŸ»3 tablespoons toasted sesame seeds

πŸ‘πŸ»handful of chopped scallions or cilantro, or both πŸ™‚
