πŸ‘‰1 large onion, diced

πŸ‘‰4 carrots, diced

πŸ‘‰2 stalks celery, sliced

πŸ‘‰2 cloves garlic, minced

πŸ‘‰1 knob celery root, peeled and diced

πŸ‘‰1 cup brown lentils, uncooked

πŸ‘‰1 can canellini beans, drained and rinsed

πŸ‘‰1/3 cup dry red wine

πŸ‘‰1/4 cup tomato paste

πŸ‘‰2 cups fresh spinach leaves

πŸ‘‰1 cup farro, uncooked

πŸ‘‰1 tomato, peeled and quartered 

πŸ‘‰1 teaspoon turmeric

πŸ‘‰2 tablespoons cumin

πŸ‘‰Salt + Pepper, to taste
Combine all ingredients EXCEPT the spinach in a large soup pot – fill with water until mixture is covered by at least 2 inches

Bring to a boil and reduce to simmer 1 hour – then add the spinach leaves and cook over medium heat another 5 minutes
